Five years ago, many would have been ready to declare food delivery and ride-hailing winner-takes-all spaces, where speed and cash are the ultimate moats. However, in the wake of Uber, Lyft, and Delivery Hero, a second wave of more frugal companies – ones that focused on getting smaller, more difficult markets right first – are increasingly emerging as the winners.
